Coconut Walnut Bread

Several people requested the recipe for the yummy Coconut Walnut Bread that is a fixture at Kirby House in Abilene Kansas. Enjoy!

2 C. flour
1 3/4 tsp. baking powder
1/4 tsp salt
1 1/3 C. sugar
1/4 tsp baking soda
2/3 C. vegetable oil
2/3 C. buttermilk
1/2 C. flaked coconut
2 large eggs
1 1/2 tsp. coconut flavor
1/2 C. chopped walnuts

Preheat oven to 325 degrees and spray bottom of loaf pan with non-stick coating.

Mix dry ingredients in large mixing bowl.

Add oil, buttermilk, coconut, eggs, coconut flavor & walnuts to flour mixture. Mix with electric mixer just until dry ingredients are moistened.

Pour into prepared pan and bake 1 hour & 15 minutes or until done with toothpick test. Do NOT open oven door during baking process to avoid having bread sink in the center.

Let cool in pan on wire rack; When cool run knife around pan edges and remove bread. Wrap and store in fridge or freeze for up to 2 months. Do NOT cut until chilled and firm.

After slicing you may want to butter and lightly grill on both sides. Delicious!
